The history of Tombacco starts way back when Giovanni Battista Tombacco decided to follow his love for the land and to build the first farm that produced peaches. A few years later, in 1919, aware that the nature of the territory could transform the oldest vines into good wine capable of making people's lives better, even in historically complex times, he decided to transform the company's activity into wine-making.
Vinification is traditional with daily pumping over for the first week and every other day for the second week of fermentation. After alcoholic fermentation is finished, racking and soft pressing of the skins, the best conditions are set for the start of malolactic fermentation. Archivio Primitivo is aged in wooden barrels.
Archivio Primitivo wine has beautiful hints of blackcurrant jam and plum followed by
intriguing notes of pepper and vanilla. Pairs excellently with lamb and mature cheeses.
