Aszú berries are fully botrytised grapes where the berries are selected one by one by hand from the bunches. 2017 was a phenomenal vintage for the Kardos winery in the village of Mad. The yields were plentiful thanks to a wonderful season and perfectly ripened berries. Gently pressed and naturally fermented using wild yeasts until the ideal harmony of sugar, acidity and alcohol are reached, the wine is then matured in 300 litre barrels for 18 months. The process is overseen by celebrated sweet winemaker László Butella in partnership with Gabor Kardos. The wine is pale lemon but richly attractive on the nose with bright orange, quince and fresh figs over honey and an elegant palate filled with tangerine, apricot and citrus jam. Zippy on the finish, as any great Furmint-based sweet wine should be, and a long, vivid finish.
Kardos Tokaji Aszu is a lusciously sweet white wine from Tokaj, Hungary It's a blend of Furmint & Harslevelu with 11.5 % abv. Pairs beautifully with duck liver pate, foie gras, caramelised apple desserts or chocolate marmalade cake. Regarding cheese try blue, especially Stilton.
