Starting as Fino Sherry, Amontillado undergoes further maturation without a ‘flor’ layer, resulting in a deeper hue and intensified traits. Utilizing hogsheads previously containing this aged Sherry, the resulting single malt bursts with flavours of dark cherries, toasted hazelnuts, and caramel sauce. The Wood Collection is bottled at a robust 48% ABV, with no artificial colouring and non-chill filtration, allowing the distinct character of each spirit to shine through.
Nose:
Soft orchard fruits, cinnamon and heather honey, with butterscotch, hazelnuts and dark tobacco.
Palate:
Honeycomb, maraschino cherries and dried apricots, followed by poached pears, blood orange, mixed nuts and cinnamon.
