Our eagle-eyed winemaker has a nose for fine hillside slopes and vines. Aquiline is one such Sauvignon Blanc from ancient soils, the land and vines carved by the Cape's great elemental Atlantic face. Breeze-driven, fresh and mineral.
Most of the grapes area harvested around the Franschhoek valley. Hand picked in the early morning. It was then softly pressed to tank and settled for 2 days, then racked to a fermentation tank. After fermentation the wine stays on its fine lees for 5 months until bottling.
Aquiline Sauvignon Blanc gives fresh lime citrus nose, lightly herbal with touches of green pepper and lemon grass. Green apple and bergamot lime on the palate with cleansing acidity and a nice streak of minerality on the finish.
Would be great with Peri Peri chicken or asparagus and lemon risotto.
