The domaine is in the south of the appellation cooled by the sea breezes of the Camargue and sitting on an ancient, raised river bed with galets roulés soil. The vines are 25 years old and yields are around 50 hl/ha. Grapes are destemmed and fermented traditionally for 15 days to ensure a good balance of fruit and tannins.
Château L’Ermite d’Auzan Rouge, Costières de Nîmes is intense, bright with ripe raspberry Grenache fruit balanced by peppery, savoury characters from the Syrah and Mourvèdre. Generous but properly balanced and underpinned with smooth, ripe tannins.
Côte de Boeuf, lamb cutlets with rosemary, dishes with a touch of chilli spice, mature hard cheeses.
